LOVE raw milk. Americans drink liquid cardboard because processors refuse to take the care they should in the processing, or mega farms. I didn’t know French cheese was illegal? (You can get raw cheese in the states: there’s a place in Winchendon (sp) Mass that does whole Guernsey. (May be Jersey.)
There are restrictions on raw milk cheese. My understanding is that they have to be aged at least 60 days to be legal. I get some wonderful raw milk chedder here. And of course – not ALL French cheeses are restricted.

No problem with that since the Winchendon (sp) cheese sells in 3 years old and above, if I remember right.
